The Spices by ofi manufacturing facility located in Las Cruces, New Mexico processes around 1000 SKU's of red chiles grown in the “Hatch Valley” region.
Our facilitity operates 24/7 and is the largest red chile processing plant in the world, with 22 acres total -- 155,000 sq. feet for manufacturing and 150,000 sq. feet for dry storage. Produces dried spice ingredients in 1,000 lbs. totes, 1,200 lbs. Super Sacks 240 lbs. drums, 50 lbs. boxes and bags.

Analytical – Extractable Color, Visible Color, Pungency, Particle Size, Moisture, Water Activity, Bulk Index, Adulteration Indicators (Added Colors, contaminants), Base Purity (rodent hair, insect fragments), Pesticide Residue, Microbiological- Salmonella, Aflatoxin, Ochratoxin, SPC, Yesat/Mold, Coliform, E.Coli
In-House Steam Treatment
- In traditional methods, Microbial load reduction depends on the Initial load, time and temperature combinations,
- Has a negative effect on color, flavor (volatile oils) do come down marginally,
- New technologies are available, but not fully validated to provide a fool proof kill step (FDA comes into play)
- Potential new technologies are being developed for spice powders (Dry Steam, Safe Steril, Rafannel systems)
- We can look at this for products which are less sensitive to color and not for products which need high surface color (appearance)
